Blackcurrant vinegar is also fantastic for blackcurrant-pickled red onions. The deep, round blackcurrant flavor complements the red onions incredibly well.
Recipe for blackcurrant pickled red onions:
Ingredients:
- 3 parts blackcurrant vinegar with lime
- 2 parts cane sugar
- 1 part water
- pinch of salt
- red onion
Procedure:
Bring the blackcurrant vinegar, cane sugar, water and salt to a boil in a saucepan. Scald your jars and cut the onions into rings or wedges and put them in the cleaned jars.
When the sugar has dissolved, pour the pickle over the onions. Close the jars and place them on the kitchen counter to cool. When the jars are cold, store the blackcurrant pickled red onions in the refrigerator.
